'Hot Chips Please'

Here at Land & Sea we take our hot chips very seriously.. for too long they have been treated merely as a side dish and not given the respect they deserve. So.. we hand wash, hand cut and thrice cook our chips on site to ensure they are crisp, fresh and fluffy every time.

Step 1: We hand wash our Sebago potatoes - These Australian grown potatoes are extremely robust, growing all year round and are great for any culinary use.

Step 2: We hand cut them using our 'French Fry Cutter' turning the ordinary potato into the chip shape we've grown up loving.

Step 3: We leave them to soak in cold water overnight, this will remove any excess starch, changing the taste and helping the chip retain its shape when cooked.

Step 4: We steam the potato to remove any remaining starch, then cool in fridge. We blanch to seal the potato, then cool again. After that they are fried and finally ready to be enjoyed.

Step 5: Then buy a beer of choice, add salt and malt vinegar and enjoy with friends.
